Watermelon And Feta Salad
This fresh and juicy Watermelon and Feta Salad will leave you feeling refreshed and satisfied. Best enjoyed poolside with a dose of the sunshine, bliss!

Recipe 1
Ingredients:

1 watermelon Small size (about 500 grams)
2 pieces of big god (replace with peach if less fancy)
200 grams of cabbage, lettuce, or other favorite vegetables
150 grams of cheese
2 tablespoons sunflower seeds
2 tablespoons of Olive Oil
2 tablespoons fresh lemon juice
1/4 teaspoon salt

How To Make Watermelon And Feta Salad:

Watermelon And Feta Salad
Ingredients (makes 1 serve):

Salad:
150g watermelon, cut into 2.5cm cubes
150g assorted cherry tomatoes halved
4-5 cos lettuce leaves, roughly chopped
¼ small red onion, sliced
1 small handful fresh mint leaves, shredded
40g low-fat salt-reduced feta cheese, crumbled

Basil Citrus Dressing:
5 fresh basil leaves, finely shredded
1 tbsp fresh orange juice
1 tbsp fresh lemon juice
1 tsp honey
2 tbsp olive oil
salt and freshly ground pepper, to taste

Method:

1. Make the dressing, whisk the basil leaves, orange juice, lemon juice and honey together in a small bowl. Slowly pour in the olive oil, whisking constantly, to form an emulsion. Season with salt and pepper, if desired.

2. Place the watermelon, tomatoes, cos lettuce, onion, and mint in a mixing bowl. Drizzle over the dressing and toss gently to combine.

3. Place the salad in a serving bowl, sprinkle over the feta and serve immediately. Enjoy!
